I'm thinking soup (you can buy packets of dry Lipton chicken soup, so it's not from a can), or salad. Take a head of lettuce, and tear it up, and then some chicken, like a can of chicken breast, and some dressing that wouldn't be too strong.
Fruits and veggies, the fresher the better, throw them in the salad.
Sugar free jello with lite cool whip makes a fun dessert!
Maybe just a plain hamburger, no bun, for protein.
Baked potatoes without all the butter and sour cream...just some light sour cream maybe, or a little grated cheese?
I forget if you have a rice cooker? Chicken and rice is mild on the mouth sores.
We eat Roast Beef in a package from Hormel I believe. I know it sounds horrible, but you seriously won't believe how incredible it tastes. I've converted a lot of people over to this stuff. http://www.hormelfoods.com/brands/hormel/HormelRefrigeratedEntrees.aspx It takes 7 minutes to make and literally tastes like it took all day. Then I whip up some potato flakes and a vegetable and WHA-LAH. Done. This meal is so good I even fed it to David when we were first dating, and he thought I'd been cooking the roast all day. The quality of the meat is really high too. Not fatty or gross (and I really hate meat. I'm pretty much a vegetarian, except this and chicken, which I rarely eat.) I didn't tell him until way later on in our relationship that it was microwaved. Trust me on this one, and give it a try. Check Albertson's or Walmart for it. Often they'll have a two for one price deal on them. I think they're around $7.00 and each package will feed three people in my experience. Enjoy, and let me know what you think of it!
